We aged this wine briefly in new American Oak barrels, enough to give it a “kiss of oak” to yield a harmonious balance of fruit, acid, and velvety mouth-feel. Initial wafts of toasted almonds, caramel and candied lemon gives way to notes of pear, pineapple and white flowers. This wine is crisp, refreshing, and elegant. This is a very enjoyable wine alone and also pairs well with white fish, pork, chicken, butter or cream sauces or soft white cheeses such as Brie. Enjoy!
