Dégustation Flight Night July 25th, 2024 -$69 plus tax + gratuity

Dégustation (meaning tasting in the English translation) is the careful, appreciative tasting of various foods, focusing on the gustatory system, the senses, high culinary art and good company. Dégustation is more likely to involve sampling small portions of all of a chef's signature dishes in one sitting.
The Dégustation Flight Night will be led by a JOLO Ambassador including a Wine 101 and pairing explanations. A 'Dinner and a Show' if you will. JW and the chefs have prepared a carefully thought-out menu that pairs perfectly with the wine selections.
There will be no menu substitutions available.
Menu:
1st Course: Seared Scallops with Tabiko Caviar atop carrot and ginger pureé, fried collard greens, citrus gastrique (Paired with Beach Bubbles )
2nd Course: Fried Goat Cheese- arugula, lemon caper vinegarette, orange wedges (Paired with JOLO PINK)
3rd Course: Herbed Chicken Roulade- chicken demi, duck fat fingerling potatoes, oyster mushroom succotash, sauteéd spinach (Paired with Cabernet Franc- Library Wine)
