Dégustation (meaning tasting in the English translation) is the careful, appreciative tasting of various foods, focusing on the gustatory system, the senses, high culinary art and good company. Dégustation is more likely to involve sampling small portions of all of a chef's signature dishes in one sitting.
The Dégustation Flight Night will be led by a JOLO Ambassador including a Wine 101 and pairing explanations. A 'Dinner and a Show' if you will. JW and the chefs have prepared a carefully thought-out menu that pairs perfectly with the wine selections. There will be no menu substitutions available.

- Salmon cake atop black bean puree with smoked corn, red onion, green chili salsa, crème fraiche, tomato confit
- JOLO PINK
- Chilled pasta primavera, bow tie pasta, asparagus, broccoli, red pepper, onion, basil, salami, parmesan, house vinaigrette
- Golden Hallows Reserve
- Iberian Pork- slow roasted herbed pork, sherry wine, mirepoix, Iberian chimichurri, roasted red pepper, cast iron onions, saffron rice
